For those of y'all who don't know what a mug cake is...It's literally a cake that you make in a mug in the microwave!! Quick, easy, and the perfect clean treat. This recipe tastes and feels just like real cake. You will be wondering how it is actually healthy!! For those who have tried these before, you know they can also turn out really bad. Whether it's because they are falling apart, or they just taste chalky, you know what I mean. But, I have finally found the perfect recipe for the perfect mug cake! High protein, grain free, and low fat and sugar! Keep reading to find out how to make this guilt free dessert.
Ingredients:
3 tbsp. liquid egg whites
slightly less than 3/4 cup non dairy milk
1 stevia packet
3 chocolate stevia drops (optional)
pinch of xanthan gum (optional-helps to thicken batter)
heaping spoonful toasted carob powder
1/2 scoop SFH vanilla whey protein powder (I would highly recommend this protein powder as I have found that most others I try with mug cakes make them taste chalky, but any vanilla flavor would work)
3 tbsp. coconut flour
Directions:
Stir all ingredients together in a bowl. Spray a large mug with coconut oil non stick spray then transfer batter to mug. Microwave for 2 minutes then let set 30 seconds. Microwave another 20-25 seconds. Let cool slightly then dump onto a plate or just eat it straight from the mug. Cut into pieces and layer with your favorite toppings or just put them right on top! My favorite is adding banana, nut butter, and granola!
