It's the first day of October and I couldn't be more excited!!! Even though I'm not a fan of cold weather, I am definetley a lover of all fall flavors! Also, you can't argue that the colors of fall food makes any plate look pretty. This is a recipe I came up with last week that is the perfect way to get you into the fall spirit of cooking! Hope you guys enjoy :)
Ingredients:
• Organic/Grass fed chicken breast
• Egg whites
• Almond Milk or other non dairy milk
• Coconut Flour
• Pistachios (with shells removed & crushed)
• Kabocha Squash
• Extra Virgin Olive Oil
• Ground Cinnamon
Directions:
Preheat oven to 425 F. Cut Kabocha squash in half and deseed. Cut into cubes and put in a plastic bag with 1/2-1tspb olive oil (depending on how much you are making) and cinnamon, then mix around and put into a baking dish sprayed with non stick cooking spray. Place in oven. You will take this out after 20 minutes and flip then put it back in the oven for 15 minutes. Then, broil for about 3 minutes. (be sure chicken is out before this step) After you put the squash in the oven, mix a little bit of almond milk with a few egg whites and mix. Dip the chicken into this mix then dip chicken into coconut flour. Dip this back into the mixture and then dip into the crushed pistachios. Place in a baking pan sprayed with non stick cooking spray and bake in the middle rack of the oven for 30-35 minutes while your squash is roasting, removing before you broil the squash. Now just plate and serve!! Hope you guys enjoy, and Happy first day of October.
