If you are looking for a good pancake recipe and love chocolate, but don't want all the added fat and sugar, this is the one for you! Not only is a single serving about eight pancakes (perfect for a volume eater like myself!!), but they also have amazing flavor!! If you make these as a meal, I would suggest adding in another protein source on the side, such as a shake, or eggs.
Ingredients
2/3 cup oat flour (I bought mine at whole foods or you can make your own)
about 3/4 cup non dairy milk
1 ripe or almost ripe banana
heaping spoonful of toasted carob powder
1 stevia packet
Directions
Blend together all ingredients in a blender or mixer
Heat a cooking pan and spray with non stick coconut oil spray in-between each pancake
Pour batter onto pan in medium sized circles.
Wait for them to bubble on top, then flip and cook about another minute.
Repeat this until you have used up all the batter, stack them up, and top with your favorites! Here I used Justin's maple almond butter, hemp hearts, coconut flakes, banana, and honey. Enjoy!
