• 1 already baked sweet potato (chopped into cubes)
• 1 bag fresh brussel sprouts (chopped into halves)
• 1/4 large red onion (chopped)
• extra virgin olive oil
• black pepper
• sea salt
• balsamic vinegar
Heat about 1/2 tbsp. olive oil in a non stick pan.
Add in brussels, red onion, a few shakes sea salt, and black pepper. Cover on medium heat until cooked through.
Add a few drops of olive oil and diced sweet potato.
Add a small dash balsamic vinegar. ( emphasizing small because a little goes a long way in this )
Stir until warm. Serve and enjoy!!
