Chocolate chip cookies have always been one of my favorite desserts. When I was younger, I think me and my brother ate the whole batch the night we made them. And probably the majority of that in cookie dough...But sometimes we want to be able to enjoy our favorite treats without all the added sugar and fat. This recipe is grain free and sugar free, but still super yummy! Hope you enjoy.
First I wanna say, the texture of these cookies are more fluffy and crumbly than your regular cookie, but the taste is on point and I will keep experimenting with textures. I thought these turned out great regardless!
What you will need:
2/3 cup coconut flour
2 tbsp. coconut oil (melted)
1 tablespoon vanilla extract
1 tsp xanthan gum
pinch of baking soda
pinch of salt
2 egg whites
6 tbsp. stevia baking sugar
6 tbsp. unsweetened vanilla almond milk
stevia sweetened dark chocolate chips (this is the kind I used but that's up to you, as well as how much you use)
Directions:
Mix together coconut flour, xanthan gum, baking soda, and salt. In a separate bowl, mix together the melted coconut oil, egg whites, and vanilla. Stir in stevia to this bowl, and then the milk. Add in the coconut flour mixture a little bit at a time then add your desired amount of chocolate chips.
Let the dough stand for about 15 minutes then scoop into balls onto a pan with parchment paper. These balls will be very crumbly so don't try to form them yet. Wet hands and pay dough into the size cookie you want (they won't change shapes while cooking). Re wet hands between each cookie and repeat. Bake at 350 for about 15 minutes (less if you make them thin). Take out and let sit for about 8 minutes. Now eat up!!! Try to save some for later..if you can :)
