One of my all time favorite foods is Asian Cuisine. I love basically any dish with noodles and anything that has asian flavors. The problem is, most of these dishes are full of simple carbs coming from non-whole grains. Lucky for you, I have finally found the perfect dish to satisfy that craving for a nice noodle stir fry. Because who doesn't love that?! This gluten free dish is perfect for anyone and you even get your veggies in there! And it's super easy..! Keep reading for the full recipe.
(Below are the instructions for 1 serving)
Ingredients
1/4 package Annie Chun's Maifun Brown Rice Noodles (can be found at whole foods as well)
1 large zucchini
liquid aminos
coconut oil
minced garlic
1 small lemon
black pepper
Directions
Using a veggie spiralizer, make 1 whole zucchini into noodles and set aside
Start a pan on the oven with 1 tsp. minced garlic and a dash of black pepper
Put brown rice noodles into a bowl of hot water and set aside
Place your zoodles into the pan with the garlic and add in coconut oil (1/2-1 tbsp.)
Once this has cooked for about a minute, drain your noodles and add them to the pan
Pour in liquid aminos and the juice of the small lemon and stir for a couple minutes (not too long or your zoodles will get soggy)
Put on a plate, and top with whatever you like! Be sure to add a protein and a healthy fat such as salmon, nuts, or avocado. You could also mix in any other veggies you like!
